The Monks Mixed Vegetable Ensemble Recipe

Ingredients
  • 2 tbsps butter .
  • 1/4 lb cellophane noodles .
  • Casserole .
  • 2 tsps sugar .
  • 1-2 tsp cornstarch (optional) .
  • 6 large dried Chinese mushrooms .
  • 12 oz bean curd .
  • 1/3 lb asparagus .
  • Monks .
  • 2 oz dried lily buds, stems .
  • 2 tsps sesame oil (optional) .
  • sauce for casserole .
  • 2 tbsps soy sauce .
  • 1 tbsp soybean paste .
  • 4 tbsps vegetable broth .
  • 1/3 lb bamboo shoots .
  • oil .
  • 1 tbsp hoisin sauce .
  • 1/2 lb Chinese cabbage or green cabbage .
  • 2 tbsps sesame oil .
  • 1/3 lb carrots .
  • 1/2 tsp salt .
  • 2 tbsps sherry wine

Directions
  • Step #1 Casserole: trim the asparagus, carrots & bamboo shoots to the same thickness as the asparagus & cut into 1-2 inch segments.
  • Step #2 Soak the dried mushrooms for 1/2 hr in hot water & then shred.
  • Step #3 Cut cabbage into 1 inch slices.
  • Step #4 Place 1st three in wire basket.
  • Step #5 Deep fry for 6 to 7 mins.
  • Step #6 Drain.
  • Step #7 Heat butter & sesame oil in casserole.
  • Step #8 When butter melts add mushrooms & cook for 30 seconds then add the cabbage & the salt.
  • Step #9 Stir fry carefully over med heat for 3 to 4 mins.
  • Step #10 Add deep fried vegetables & remaining ingredients.
  • Step #11 Increase heat to high & stir & turn vegetables for 3 to 4 mins.
  • Step #12 Serve in casserole.

  • Step #14 NOTE: 2 oz dried lily buds, stems should be 2 oz lily bud stems.
  • Step #15 The zaar computer threw fits with the second version.
  • Step #16 It liked the first which makes no sense in the recipe.
  • Step #17 You can sub any hard vegetable for the asparagus.
  • Step #18 Use 4 tbsp soy sauce.
  • Step #19 Increase the broth to 12 tbsps.
  • Step #20 Cube the tofu [after draining & pressing] into 1 inch cubes.
  • Step #21 Deep fry for 2 to 2 mins with the other deep fry vegetables.
  • Step #22 Soak cellophane noodles in hot water for 5 mins & drain.
  • Step #23 Cut buds into 2 inch long pieces & soak in 1 c hot water for 1/2 hr with dried mushrooms [save the water].
  • Step #24 When the mushrooms, noodles & buds are soft, add to casserole with other vegetables along with the soaking water.
  • Step #25 Thicken if needed with cornstarch.
  • Step #26 Cook for 10 mins covered in casserole.
  • Step #27 Sprinkle top with the sherry & extra seseme oil.
