Step #1 Mix flour & salt in a basin, make a hollow in the centre & drop in the egg.
Step #2 Stir with a wooden spoon & add liquid slowly, until all the flour is worked inches.
Step #3 Beat well & add in the remaining liquid.
Step #4 For each pancake -- melt a small peice of fat in the frying pan.
Step #5 When it begins to smoke, stir the batter & place approximately 2 tbsps in the pan.
Step #6 When golden brown underneath, turn & cook other side.
Step #7 Turn out on sugared paper, sprinkle with sugar & lemon juice & roll up.
Step #8 Pancakes keep well in the freezer, excellent for savoury pancakes in a hurry, espeically when you've got left over dinner to put in the middle of them.
Step #9 Top with a cheese sauce & bake this until bubbling hot.
