1 tsp black pepper (more to season the steaks before cooking) .
1/3 c bourbon whiskey .
1 tbsp sliced lemon zest .
3 tbsps kosher salt (use kosher salt only!) .
2 1/2 c water (room temperature) .
1/3 c honey .
2 tbsps coarsly sliced fresh garlic (can use more)
Directions
Step #1 In a bowl mix water with 1/3 c bourbon, lemon zest & black pepper; stir this to completely dissolve the salt, kosher salt, 1/3 c honey, then add in the garlic.
Step #2 Place the steaks In a large-ish resealable plastic bag & set in a shallow dish.
Step #3 Pour the brine over the steaks then seal the bag.
Step #4 Toss bag to coat the steaks in the brine.
Step #5 Place in put in the fridger for 6-8 hrs (no more than 8 hrs!) tossing the bag every once in awhile making certain that the meat is covered with the brine.
Step #6 About 2 hrs before cooking the steaks, remove steaks & discard the marinade.
Step #7 Rinse the meat VERY well under cold water & place on a plate/s.
Step #8 Let the beef sit our on the counter for about 2 hrs or until almost room temperature (THIS IS IMPORTANT! the steaks must come down to about room temp before cooking!).
Step #9 Spice up the steaks with only black pepper (salt the steaks after cooking).
Step #10 Place the steaks on the grill & grill to desired doneness (or steaks can be oven-broiled).
