Ingredients
  • Mocha Frosting .
  • 1/2 c cold brewed coffee .
  • 3 tbsps milk chocolate chips .
  • 1 1/2 c flour .
  • 1/2 tsp salt .
  • 3 tbsps semi-sweet chocolate chips .
  • 1/2 c chocolate sprinkles .
  • 1/3 c baking cocoa .
  • 2 c confectioners' sugar .
  • 1 c sugar .
  • 3 tsps cider vinegar .
  • 1/2 c vegetable oil .
  • 1-2 tbsp brewed coffee .
  • 1/3 c butter, softened .
  • 2 eggs .
  • 1 tsp baking soda .
  • 3 tsps vanilla extract

Directions
  • Step #1 In a small mixing bowl, mix the flour, sugar, cocoa, baking soda & salt.
  • Step #2 In a small bowl, coffee, mix the eggs, oil, vinegar & vanilla.
  • Step #3 Add to dry ingerdients; mix well.
  • Step #4 Fill paper-lined muffin c three-fourths full.
  • Step #5 Bake at 350 for 20-25 mins or until a toothpick comes out clean.
  • Step #6 Cool for 10 mins before removing from pan to a wire rack to cool.
  • Step #7 For frosting, in a small microwave-safe bowl, melt chips; stir until smooth.
  • Step #8 Add butter; beat until mixed.
  • Step #9 Gradually beat in confectioners' sugar & coffee.
  • Step #10 Pipe frosting onto ccakes.
  • Step #11 Top with sprinkles; carefully press down.
