Irish Whiskey Brownies With Sticky Toffee & Thick Cream Recipe

Ingredients
  • 1 1/2 c unbleached all-purpose flour .
  • 1 tbsp butter, softened .
  • 1 c sugar .
  • 1/2 c unsweetened cocoa .
  • 1 tsp baking powder .
  • 4 c whipping cream .
  • For the Brownies .
  • 1/2 tsp sea salt .
  • For the sticky toffee sauce .
  • 2 c dark brown sugar, packed .
  • 2 large eggs .
  • 1/3 c butter, plus .
  • whipped cream .
  • 1/3 c Irish whiskey .
  • 1/4 c semi-sweet chocolate chips .
  • 1/2 c butter

Directions
  • Step #1 Lightly butter a 9-inch square pan.
  • Step #2 Preheat oven to 350°F.
  • Step #3 Place the whiskey in a small saucepan & bring to a boil over high heat.
  • Step #4 Remove from the heat as soon as it has come to a boil & add the chocolate chips, stirring to melt them completely.
  • Step #5 In the bowl of an electric mixer (or by hand), cream together the sugar & butter until smooth.
  • Step #6 Add the eggs & continue to mix ingredients together well.
  • Step #7 Sift together the flour, baking powder & salt, cocoa, & add slowly to the egg mixture.
  • Step #8 Add the whiskey & chocolate mixture & beat at lowish speed just until mixd.
  • Step #9 Scrape the batter into the prepared pan & smooth over the surface.
  • Step #10 Bake for exactly 25 mins.
  • Step #11 Cool in the pan.
  • Step #12 For the sauce, stirring all the while, mix all the ingredients in a medium-sized saucepan & bring to a boil over med-heat/flame, until thick.
  • Step #13 Reduce heat to a simmer & cook, stirring frequently, for 6-7 mins or until the mixture has reduced & is quite thick.
  • Step #14 Keep warm; set to one side.
  • Step #15 To serve:.
  • Step #16 Place a brownie on a dessert plate, drizzle with the warm sticky toffee sauce, top this with whipped cream or ice cream & drizzle again with the sauce.
  • Step #17 Serve as soon as possible.
