1 1/3 c all-bran cereal or bran flakes, slightly broken up with your hands .
2 tsps lemon juice .
3/4 c carrots, grated .
2 1/2 tsps cinnamon .
2/3 c apples, finely sliced .
1 egg, lightly beaten .
1/3 c brown sugar .
1 orange, rind of .
1 3/4 c whole wheat flour .
1/2 c dried apricots, sliced .
1/4 c non-hydrogenated margarine .
Garnish (Topping) .
1/2-2/3 c apples, coarsely sliced or white chocolate chips .
1 tsp baking powder .
1 tsp baking soda .
Muffins .
1 3/4 c skim milk
Directions
Step #1 Chop up apricots.
Step #2 Place in about 2/3 c boiled water & let sit for about 20 mins till plump & softened; drain all water out & set plumped apricots aside.
Step #3 In a large bowl, mix milk, egg, lemon juice, & orange rind.
Step #4 In a medium bowl mix flour, brown sugar, baking soda, All-Bran cereal, baking powder & cinnamon.
Step #5 Add flour mixture to the wet ingredients & stir until almost mixed; fold in grated carrots, sliced apple & apricots just till mixed.
Step #6 Spray muffin tin with cooking spray; fill muffin tins until almost full & sprinkle sliced apples or white chocolate chips on top of each muffin.
Step #7 Bake at 375°F for 15 to 20 mins or until toothpick inserted into the centre of the muffin comes out clean; let this stand in pan for a couple of mins before cooling muffins on a wire rack.
