Frosted Fruit Cake Bars Recipe

Ingredients
  • 1/3 c sliced pecans, toasted .
  • 1/2 c sugar .
  • 1/4 tsp nutmeg .
  • red sugar (optional) .
  • 1 tbsp rum .
  • 1/4 c shortening .
  • 1 tbsp orange zest .
  • 1/2 tsp baking powder .
  • 2 tbsps orange juice .
  • 1/2 c mixed candied fruit .
  • 1/4 tsp salt .
  • 1 1/4 c flour .
  • 1 tbsp melted butter .
  • 1/2 tsp cinnamon .
  • 1 egg .
  • green sugar (optional) .
  • 1/4 c powdered sugar, sifted .
  • 1/2 c dried cranberries .
  • Glaze

Directions
  • Step #1 Preheat oven to 400F degrees F.
  • Step #2 Line baking sheet with parchment or grease.
  • Step #3 In a large bowl, cream together shortening & sugar; add egg, orange zest, & juice.
  • Step #4 Mix well.
  • Step #5 Sift together flour, baking powder, salt, cinnamon & nutmeg.
  • Step #6 Add to creamed ingredients.
  • Step #7 Stir in raisins, candied fruit & nuts.
  • Step #8 Shape dough into a strip roughly 7x12 (mine was more like 5x12) & bake for 12 mins.
  • Step #9 Remove from oven; cool slightly, then frost with glaze while warm.
  • Step #10 Sprinkle top with colored sugar if desired.
  • Step #11 Cut into strips.
  • Step #12 Glaze: Whisk together all ingredients until smooth.
  • Step #13 Makes about 20, once you've eaten away the scraps.
