Apple-ginger Oat-bran Muffins Recipe

Ingredients
  • 1/2 c packed light brown sugar .
  • 2 tbsps extra- light olive oil .
  • 3/4 c finely sliced unpeeled apples .
  • Streusel topping .
  • 2 tsps grated fresh ginger .
  • 2 tbsps all-purpose flour .
  • 1/4 c apple juice .
  • 2 tbsps finely sliced unpeeled apples .
  • 1/2 c 2% low-fat milk .
  • 1 c flour .
  • 1/4 tsp salt .
  • 3/4 tsp ground cinnamon .
  • 1 1/2 tsps cider vinegar .
  • 1 tsp baking powder .
  • 1/4 tsp baking soda .
  • 1 tbsp extra- light olive oil .
  • 1/4 tsp ground cinnamon .
  • 2 eggs, beaten .
  • 3/4 c oat bran

Directions
  • Step #1 Heat oven to 425F degrees F.
  • Step #2 Line the c of a standard muffin pan with paper liners or coat c with nonstick cooking spray.
  • Step #3 In a measuring c, mix milk & vinegar; set aside.
  • Step #4 In a large bowl, mix next 7 dry ingredients.
  • Step #5 Make a well in the center; set aside.
  • Step #6 In a medium bowl, mix milk with next 5 ingredients.
  • Step #7 Pour mixture into well & stir until batter is still slightly lumpy.
  • Step #8 Pour into muffin pan.
  • Step #9 To make topping: In a bowl, mix flour & cinnamon.
  • Step #10 Stir in oil until mixture resembles coarse crumbs.
  • Step #11 Stir in apple.
  • Step #12 Sprinkle top over batter.
  • Step #13 Bake 15 to 18 mins, or until tops are golden & a toothpick inserted in center comes out clean.
  • Step #14 Cool for 5 mins in pan on a rack; remove this from pan to cool completely.
