Coconut-pecan Frosting Recipe

Ingredients
  • 4 egg yolks (slightly beaten) .
  • 1 1/2 c sugar .
  • 1 (12 oz) can evaporated milk .
  • 3/4 c butter .
  • 1 1/2 tsps vanilla .
  • 1 (7 oz) package flaked coconut .
  • 1 1/2 c sliced pecans or walnuts

Directions
  • Step #1 Mix the milk, butter, egg yolks, sugar, & vanilla In a large-ish saucepan.
  • Step #2 Cook on medium heat for 12 mins or until it is thickened & golden brown, stirring constantly.
  • Step #3 Remove from heat.
  • Step #4 Add the coconut & pecans; mix well.
  • Step #5 Cool to about room temp & of desired spreading consistency.
