Ingredients
  • 10 oz shredded red cabbage .
  • 16 oz canned beets, drained & thinly sliced .
  • 1/4 c blue cheese, crumbled .
  • 1 lb packaged coleslaw mix (shredded cabbage & carrots) .
  • 1/4 c sliced walnuts .
  • 1 1/2 c fat-free mayonnaise

Directions
  • Step #1 Combine slaw, cabbage & beets In a large-ish bowl.
  • Step #2 Add mayonnaise & blue cheese & mix well.
  • Step #3 Transfer mixture to individual plates.
  • Step #4 Place walnuts in a small skillet over medium-high heat & cook this until golden brown, shaking the pan frequently, about 2 to 3 mins.
  • Step #5 Top plates with toasted walnuts.
  • Step #6 Yields about 1 c per serving.
