Low-fat Chicken Corn Chowder Recipe

Ingredients
  • 1/2 tsp fresh ground black pepper .
  • 1 tbsp sugar .
  • 1 (16 oz) package frozen white corn .
  • 1 (10 3/4 oz) low-fat condensed cream of chicken soup .
  • 1/2 tsp dried basil .
  • 2 tbsps all-purpose flour .
  • 1/2 c orzo pasta, uncooked .
  • 1 medium onion, sliced .
  • 2 (10 oz) cans white meat chicken, drained .
  • 1/2 tsp dried rosemary .
  • 2 (14 1/2 oz) cans low-fat chicken broth .
  • 1/2 tsp salt .
  • 1 c skim milk

Directions
  • Step #1 In a large Dutch oven or stockpot, sauté onion in a small amount of the chicken broth over med-heat/flame 5 mins, or until onion is tender.
  • Step #2 To the Dutch oven, chicken, orzo, salt, basil, add in the remaining chicken broth, cream of chicken soup, sugar, rosemary, corn, & pepper.
  • Step #3 Bring to a boil & turn heat to low; simmer 10 mins or until orzo is tender.
  • Step #4 In a small bowl, stir this together milk & flour until smooth.
  • Step #5 Slowly add to pot & let simmer 5 more mins.
