John's Roll-out Molasses Cookies Recipe

Ingredients
  • 1 tsp baking soda .
  • 3 1/2 c flour .
  • 1/2 tsp cloves .
  • 3/4 c dark molasses .
  • 1 1/2 tsps shortening .
  • 1/4 c cold water .
  • 1/2 tsp salt .
  • 1/2 tsp cinnamon .
  • 1/2 tsp ginger .
  • 2 tbsps shortening .
  • 1/2 tsp allspice .
  • 1/2 c brown sugar .
  • 1 1/2 tsps cold water

Directions
  • Step #1 Mix together shortening, molasses & brown sugar.
  • Step #2 Stir in 1/2 c cold water.
  • Step #3 Mix together the flour, salt & spices.
  • Step #4 Add to molasses mixture.
  • Step #5 Dissolve soda in 1.
  • Step #6 5 tsps cold water.
  • Step #7 Stir it into the above mixture.
  • Step #8 Gather up dough into a ball; on waxed paper, pat into a disk.
  • Step #9 Wrap up.
  • Step #10 Chill for at least an hr.
  • Step #11 Roll out between 1/4-inch & 1/2-inch thick.
  • Step #12 I thought 1/2-inch was a bit too thick, but it's up to you.
  • Step #13 Cut into shapes, specifically gingerbread men or bears.
  • Step #14 Gather up scraps, reroll & cut into shapes, pat into a ball, etc.
  • Step #15 , until you have used most of your dough.
  • Step #16 On lightly greased or sprayed cookie sheets, bake this at 350 degrees for 15-18 mins.
  • Step #17 These swell a little during cooking, so be sure to leave some space between them on the cookie sheets.
  • Step #18 Also, they taste better the day after baking when the spices have had a chance to meld with each other.
