Stir Fried Sirloin Steak W/ Brown Rice Recipe

Ingredients
  • 2 tbsps olive oil .
  • 1/2 tsp red wine vinegar .
  • 1/4 tsp kosher salt .
  • 1 lb sirloin steaks .
  • 1/4 tsp fresh coarse ground black pepper .
  • 2 c brown rice .
  • 1 tomato, sliced .
  • 1 onion, sliced (I prefer cippollini) .
  • 1/2 garlic clove, minced

Directions
  • Step #1 Cook rice fully before starting meat.
  • Step #2 Fill large saucepan with 4 c water & 2 c brown rice.
  • Step #3 Bring to boil.
  • Step #4 Reduce heat, cover, & simmer 50 mins.
  • Step #5 Set aside.
  • Step #6 Trim fat from steak & cut into small, thin pieces.
  • Step #7 In a large skillet, heat oil & sauté garlic until garlic is golden.
  • Step #8 Add steak, vinegar, salt, & pepper.
  • Step #9 Cook for 6 mins, stirring beef until brown.
  • Step #10 Add onion & tomato.
  • Step #11 Cook until onion is transparent.
  • Step #12 Stir in rice until well mixed.
  • Step #13 Note: My husband hates onions, but loves the flavor they do give this dish.
  • Step #14 To appease him, I cook with the onions & remove them prior to adding the rice.
