Step #1 Preheat frying pan to medium high; preheat your trusty oven to 350.
Step #2 Grease 13x9 pan with 1 T.
Step #3 of the olive oil.
Step #4 In a medium bowl, mix biscuit mix, basil, oregano, Parmesan, garlic & pepper.
Step #5 Pull "tenders" from breast halves.
Step #6 Dredge all pieces in the biscuit mixture; pressing it on as necessary.
Step #7 Add remaining oil to hot frying pan, & brown the chicken pieces, turning to brown all sides.
Step #8 Remove pan from heat.
Step #9 While meat is browning, mix tomato & spaghetti sauces; add garlic & more herbs if you wish.
Step #10 (I'm very heavy-handed with the basil & oregano.
Step #11 ).
Step #12 Spread a layer of cooked pasta over the bottom (about 1/3 of total pasta) of the 13x9 pan.
Step #13 Sprinkle top with 1/4 of the Mozzarella cheese.
Step #14 Spread about a c of the sauce over this.
Step #15 Repeat twice.
Step #16 (You should have about a c of cheese left.
Step #17 )
Lay the chicken pieces over the last layer of pasta-cheese-sauce.
Step #18 Pour the remaining sauce over the top of the meat, sprinkle on the remaining Mozzarella.
Step #19 Pop in the oven for 30 mins; then sprinkle on reserved Parmesan cheese, bake for 10 more mins.
Step #20 SERVE: A small green salad & a few slices of crisp apple or orange or a handful of grapes are delicious accompaniments.
Step #21 PLANNED OVERS #1: Whatever meat is left, mix thoroughly into remaining pasta, cut into bite-size pieces, cheese & sauce.
Step #22 At the next meal, you may need to add a few drops of water or sauce to juice it up, but reheated--this works beautifully.
Step #23 PLANNED OVERS #2: If no meat is left-over, spread pasta in the bottom of a greased casserole, lay some pepperoni slices over the top, sprinkle with a bit of Cheddar cheese, & bake this until bubbly.
