Mahi-mahi With Fresh Pineapple Salsa Recipe

Ingredients
  • 1/2 tsp lime zest .
  • 2 tbsps fresh lime juice, divided .
  • 1/4 c green bell peppers, finely sliced .
  • 1 tbsp olive oil .
  • 4 mahi mahi fillets (4-oz each) .
  • 1/2 tsp white pepper, freshly ground .
  • 1/4 c red bell peppers, finely sliced .
  • nonstick cooking spray, as needed .
  • 2 tbsps fresh cilantro, finely sliced .
  • 1/2 tsp red pepper flakes .
  • 1 1/2 c fresh pineapple, sliced

Directions
  • Step #1 To prepare Pineapple Salsa, mix pineapple, cilantro, red & green peppers, 1 tbsp lime juice, red pepper flakes & lime peel in medium bowl.
  • Step #2 (Pineapple Salsa may be prepared 1 to 2 days ahead & put in the fridged.
  • Step #3 ).
  • Step #4 Preheat broiler.
  • Step #5 Spray rack of broiler pan with cooking spray.
  • Step #6 Rinse mahi-mahi & pat dry with paper towels.
  • Step #7 Place mahi-mahi on rack.
  • Step #8 Combine remaining 1 tbsp lime juice & olive oil; brush on mahi-mahi.
  • Step #9 Broil mahi-mahi, 4 inches from heat, 2 mins.
  • Step #10 Turn & brush second side with olive oil mixture; sprinkle with white pepper.
  • Step #11 Continue to broil 2 mins or until mahi-mahi flakes easily when tested with fork.
  • Step #12 Serve with Pineapple Salsa.
