Ricotta Cake With Honey And Cardamom Roasted Vegetables Recipe

Ingredients
  • 2 large courgettes, cut into batons .
  • 2 tbsps olive oil .
  • 2 yellow peppers, deseeded & sliced .
  • for the vegetables .
  • 2 tbsps honey .
  • 8 garlic cloves, crushed .
  • grated nutmeg .
  • 12 cardamom pods, lightly crushed .
  • For the cake .
  • 4 red onions, cut into wedges .
  • 2 red peppers, deseeded & sliced .
  • 300F g pecorino cheese, grated .
  • 1 aubergine, cut into 2 " x 1/2-inch batons .
  • 1 kg ricotta cheese

Directions
  • Step #1 Heat oven to 190°C.
  • Step #2 Mix the cardamom, honey, olive oil & seasoning if desired In a large-ish bowl.
  • Step #3 Add the peppers, aubergine & courgette & mix to coat in the dressing.
  • Step #4 Spread the vegetables on a roasting tray in a single layer & bake for 1 hr.
  • Step #5 To make the cake mix the garlic, ricotta & pecorino cheeses reserving a handful of the pecorino.
  • Step #6 Spice up with the nutmeg & salt & pepper.
  • Step #7 Turn the cheese mixture into a greased 23cm round springform tin.
  • Step #8 Smooth the top & sprinkle with the remaining pecorino.
  • Step #9 Bake for 30 mins until firm & golden brown.
  • Step #10 Remove from the tin onto a serving plate & top this with the vegetables.
  • Step #11 Serve as soon as possible.
