Ingredients
3/4 c unsweetened butter, melted .
1/2 c whole blanched almonds or ground pistachio nuts (to garnish) .
1/2 small lemon, juice of (or equivalent citric acid) .
3/4 c sugar .
4 c sugar .
1 c plain yogurt .
cake .
syrup .
1 1/2 tsps baking soda .
3 c water .
3 c semolina
Directions
Step #1 Mix the semolina, the sugar & the butter In a large-ish bowl.
Step #2 Use your hands to corporate the butter with the other ingredients until mixed well.
Step #3 Mix the yogurt & the baking soda in a separate bowl.
Step #4 Wait a few mins until the yogurt doubles in size.
Step #5 When the yogurt has doubled (or almost)pour the yogurt mix on top of the semolina mix.
Step #6 Use your hands again to mix.
Step #7 After you mixd the two mixes, press the mix down on a small jellyroll pan or a 9x13 pyrex baking dish.
Step #8 (The cake mix should not be more then 1 inch thick.
Step #9 If it is bake the cake in a bigger pan or take out the extra & bake it in a separte pan.
Step #10 ).
Step #11 Cut a diamond or square design in the cake witha butter knife.
Step #12 If using almond place one in each piece.
Step #13 Bake at 400F degrees for 30min to 45 mins until its a bronze brown color.
Step #14 Pour cold syrup on top while its hot so it can absorb all through.
Step #15 If using ground pistashios sprinkle a little on top of each square.
Step #16 FOR THE SYRUP:.
Step #17 Mix all the ingredients for the syrup & place this in saucepan on high until it boils.
Step #18 If using citric acid use only the the tip of a tsp.
Step #19 Then reduce the heat to medium for 45 min to 1 hr until it coats a metal spoon.
