Garlic, Chilli And Ginger Seafood Chowder Recipe

Ingredients
  • 12 shrimp, in shells .
  • 1 tbsp fresh ginger, finely sliced .
  • 1/2 c sliced leeks .
  • sliced scallions .
  • 1/2 tsp red pepper flakes .
  • 1 lb frozen fish fillets (cod, sole or whatever you have on hand) .
  • 1/2 c celery, cut into strips .
  • 1 c carrots, cut into strips .
  • 1 tbsp sea salt .
  • 1/2 c half-and-half cream .
  • 2 tbsps lemon juice .
  • 1 tbsp olive oil .
  • 4 c hot water .
  • 3 garlic cloves, finely sliced .
  • Garnish .
  • 1 c potatoes, peeled & sliced

Directions
  • Step #1 Slightly defrost fish fillets, cut them in bite-size cubes.
  • Step #2 In a large saucepan heat olive oil, add garlic, ginger, red pepper flakes & shrimps.
  • Step #3 Cook for 2 mins, turn the shrims, add leak & celery & cook for another 3 mins, constantly stirring.
  • Step #4 Add hot water, fish cubes, carrots, potatoes & salt.
  • Step #5 Bring to boil.
  • Step #6 Reduce heat & let simmer for 20 mins.
  • Step #7 Remove from heat, add lemon juice, season this with salt and/or pepper if desired.
  • Step #8 Just before serving you may add low fat cream.
  • Step #9 Serve sprinkled with sliced scallions.
