Ingredients
  • 1/2 lb asparagus .
  • 2 tbsps olive oil .
  • 1 tsp salt .
  • 6 large eggs

Directions
  • Step #1 In a medium bowl, whisk eggs until light & frothy.
  • Step #2 Wash & cut asparagus into 1-inch pieces, discarding the ends.
  • Step #3 Place asparagus in a saute pan, place enough water to almost cover them.
  • Step #4 Cover up with lid & steam asparagus in a saute pan of boiling water until it is just tender.
  • Step #5 Do not over cook.
  • Step #6 Drain water.
  • Step #7 Add oil & saute alittle.
  • Step #8 Add eggs.
  • Step #9 Scramble/stir the mixture over med-heat/flame until eggs reach desired consistency.
