Blackberry Jam Cake Recipe

Ingredients
  • 2 c white sugar .
  • 1 c raisins .
  • 1/3 c cooking oil .
  • 2 tsps baking soda .
  • 1 c butter, room temperature .
  • 6 eggs .
  • 2 tsps cinnamon .
  • 1 c dates, sliced .
  • 6 tbsps sour cream .
  • 2 tsps nutmeg .
  • 3 c flour, sifted .
  • 1 tsp cloves, ground .
  • 2 c blackberry jam .
  • 1 1/2 c pecans or walnuts, sliced .
  • 1 tsp allspice, ground

Directions
  • Step #1 Preheat oven to 325.
  • Step #2 Grease & flour cake pan.
  • Step #3 Original recipe calls for tube pan, but I've always used 9 x 13.
  • Step #4 In large mixing bowl, cream together butter, sugar & oil until light & fluffy.
  • Step #5 Beat in eggs, one at a time, beating well after each addition.
  • Step #6 Beat in sour cream & jam.
  • Step #7 Sift or stir this together flour, soda & spices.
  • Step #8 Reserve a small amount to coat the dates, raisins & nuts.
  • Step #9 Stir remaining dry ingredients into jam mixture.
  • Step #10 Stir in flour-coated fruits & nuts.
  • Step #11 Pour batter into prepared cake pan & bake for approximately 1 to 1 1/2 hrs (will depend on which type of pan you use) or until it tests done.
