Healthy Tofu Broth Recipe

Ingredients
  • 1 red bird's eye chili, sliced .
  • 1 oz gingerroot, sliced .
  • 3 1/2 oz dried egg noodles (or other dried noodles) .
  • 2 1/2 oz tofu, sliced into cubes .
  • 1 tbsp soy sauce .
  • 3 mushrooms, sliced .
  • 1 1/2 tbsps sesame oil .
  • 2 tbsps sliced fresh coriander, to serve .
  • 9 fluid oz hot vegetable stock .
  • 1 lime, juice of

Directions
  • Step #1 Put the vegetable stock into a saucepan & bring up to the boil.
  • Step #2 Add the noodles & cook for two mins.
  • Step #3 Add the tofu, mushrooms, soy sauce, ginger, chilli, lime juice & sesame oil & cook for five mins.
  • Step #4 To serve, transfer the broth into a serving bowl & garnish with the coriander.
