Ingredients
  • 1 small leek .
  • vinegar .
  • 200 g salted fresh cheese .
  • 50 g fresh coriander .
  • 1 sprig fresh thyme .
  • 50 g fresh parsley .
  • olive oil .
  • pepper .
  • 100 g fresh mint or pennyroyal herbs

Directions
  • Step #1 Directions: Addito in mortarium satureiam, folia erucae, folia latucae, vel nepetam, apium, coriandrum, rutam, thymum viride, porrum sectivum, et caseum recentem et salsum: ea omnia partier conterito, acetique piperati exiguum, mentam, tum etiam viride puleium, aut si non erit viridem cepam, permisceto.
  • Step #2 Hanc mixturam cum in catillo composurris, oleum superfundito.
  • Step #3 OH yes, ahem if you don't read Latin:.
  • Step #4 Put savory in the mortar with mint, parsley, if it is not available, rue, onion, lettuce & rocket leaves, sliced leek, or, green thyme, coriander, or catmint.
  • Step #5 Also pennyroyal & salted fresh cheese.
  • Step #6 This is all crushed together.
  • Step #7 Stir in a little peppered vinegar.
  • Step #8 Put this mixture on a plate & pour oil over it.
  • Step #9 (Columella, Re Rustica, XII-lix).
  • Step #10 Nuts can be added if you like.
