Rubio's Mahi Mahi Burrito Recipe Recipe

Ingredients
  • 2 c whipping cream .
  • 1 tbsp fresh rosemary, minced .
  • 1/4 oz cilantro .
  • 1 c dry white wine .
  • 1/2 tsp cornstarch, dissolved in 2 tsps water .
  • 1/4 oz onions .
  • 1 tortilla .
  • 3/4 oz cabbage .
  • 12 dried chipotle chiles, stemmed .
  • 5 1/2 oz refried beans .
  • 1/2 c sliced onions .
  • 1/2 c unsalted butter .
  • 1 oz guacamole .
  • 1 tsp minced shallots .
  • 1 oz salsa fresca .
  • Chipotle Cream Sauce .
  • 1 oz cheddar cheese .
  • 3 oz grilled mahi mahi .
  • 1/2 tsp minced garlic .
  • 1 1/4 tsps fresh ground pepper .
  • 1 oz monterey jack cheese

Directions
  • Step #1 Layer cheese, beans & mahi in tortilla.
  • Step #2 Add cilantro, onion & cabbage.
  • Step #3 Top with guacamole, chipotle white sauce & salsa.
  • Step #4 Roll tightly into burrito shape.
  • Step #5 To make Chipotle Cream Sauce: Bring large pot of water to boil.
  • Step #6 Add chilies & boil until tender, about 15 mins.
  • Step #7 Drain, reserving 1/4 c cooking liquid.
  • Step #8 Puree chiles with 1/4 c cooking liquid in mixer.
  • Step #9 Strain through sieve.
  • Step #10 Set aside.
  • Step #11 Melt butter in heavy large skillet over med-heat/flame.
  • Step #12 Add 1 tbsp chipotle paste, pepper, rosemary, onion, shallot & garlic & stir 2 mins.
  • Step #13 Add wine & boil until reduced by half.
  • Step #14 Add cream & boil until reduced to thin sauce consistency, stirring every once in awhile, about 10 mins.
  • Step #15 Taste, adding more chipotle paste if desired.
  • Step #16 Add cornstarch mixture & boil 1 min, stirring constantly.
  • Step #17 (Can be prepared 1 day ahead.
  • Step #18 Cool completely.
  • Step #19 Cover up & put in the fridge.
  • Step #20 Rewarm before using.
  • Step #21 ) Add chipotle cream sauce to your burrito to give it that creamy & tangy Rubio's flavor.
