Step #1 To an 8-inch omelet pan, add 1 to 2 tsps butter & place over med-heat/flame to warm.
Step #2 Add the sliced onions & bell peppers, stirring until onions are wilted.
Step #3 Stir in the sliced Canadian bacon & cook this until warmed.
Step #4 Beat together the eggs & yogurt/sour cream, salt & pepper, pour over onion mixture & cook this until bottom is set.
Step #5 As the egg sets, pull cooked portion to the center allowing the uncooked portions to run to bottom of pan.
Step #6 When omelet is set on bottom there are a couple of options, if you have another omelet pan the same size, you can flip the omelet into the other, you could put under the broiler the broiler for a few mins to set or if you are really good flip the omelet & allowing it to finish cooking.
Step #7 Lightly butter the bread with softened butter, top this with shredded cheese & cover with remaining slice of bread, cut omelet in half & using half for each sandwich place on unbuttered side of bread, buttered side up.
Step #8 Cook on preheated Panini press as per manufacturer’s recommendations until browned.
