Mixed-grain And Vegetable Stir-fry Recipe

Ingredients
  • 1 tbsp vegetable oil .
  • salt .
  • 1 large garlic clove, minced .
  • 1 c Kashi or other uncooked mixed-grain cereal .
  • 2 c sliced mushrooms .
  • 1 tbsp low sodium soy sauce .
  • 1 cinnamon stick (1 2-inch stick) .
  • 1 tbsp minced fresh ginger .
  • 1 c sliced green onions (about 4) .
  • 1/2 c sliced onions .
  • 2 c sliced carrots (about 3) .
  • 1/2 c lentils .
  • 2 red bell peppers, cut into 1/4 inch thick strips .
  • 1 tsp low sodium soy sauce .
  • 2 (14 1/2 oz) cans low sodium vegetable broth .
  • 2 tsps oriental sesame oil .
  • 2 garlic cloves, minced .
  • 2 tbsps vegetable oil .
  • 2 tbsps water .
  • 4 c broccoli florets (about 1 lg. bunch) .
  • 1 tbsp curry powder .
  • VEGETABLES .
  • MIXED GRAINS

Directions
  • Step #1 GRAINS: Heat oil in heavy large saucepan over medium-low heat.
  • Step #2 Add onion & garlic & saute until onion is just golden brown, about 6 mins.
  • Step #3 Add curry powder & saute until fragrant, about 1 min.
  • Step #4 Mix in Kashi, lentils & cinnamon stick.
  • Step #5 Stir until grains are lightly coated with oil, about 2 mins.
  • Step #6 Add broth & bring to boil.
  • Step #7 Cover up & cook this until grains are tender & liquid is absorbed, about 35 mins.
  • Step #8 Remove from heat.
  • Step #9 Spice up with salt.
  • Step #10 Cover up & keep warm.
  • Step #11 VEGETABLES: Heat 1 tbsp oil in wok or heavy large skillet over high heat.
  • Step #12 Add ginger & garlic & cook this until just golden, stirring constantly, about 10 seconds.
  • Step #13 Add broccoli & carrots & stir-fry 1 min.
  • Step #14 Reduce heat to medium.
  • Step #15 Add water, cover & cook this until carrots are almost crisp-tender, about 3 mins.
  • Step #16 Turn heat to high.
  • Step #17 Add remaining 1 tbsp oil, red bell peppers, mushrooms & green onions.
  • Step #18 Stir-fry until vegetables are heated through, about 2 mins.
  • Step #19 Remove from heat.
  • Step #20 Add soy sauce & sesame oil; toss thoroughly.
  • Step #21 Transfer grains to platter.
  • Step #22 Spoon vegetables over & serve.
