Abby's Peaches 'n Cream Oven-puffed Pancakes Recipe

Ingredients
  • 1/2 c flour .
  • 1/8 tsp cinnamon .
  • 1/2 c milk .
  • Cream Sauce (use 3 tbsps reserved peach syrup) .
  • 2 tbsps sugar .
  • 2 tbsps pecans, sliced .
  • 2 eggs, beaten .
  • 1/4 c sour cream .
  • 1 (16 oz) can peaches in light syrup, drained, reserving 3 tbsp liquid .
  • 1 tbsp margarine or butter .
  • 1/4 tsp salt .
  • 1/8 tsp almond extract .
  • Topping .
  • Pancake .
  • 2 tbsps powdered sugar

Directions
  • Step #1 Heat oven to 425F degrees.
  • Step #2 Mix flour, sugar, salt, milk & eggs; beat with a wire whisk or eggbeater until smooth.
  • Step #3 Place margarine or butter in a 9 inch pie pan; melt at 425F degrees for 2-4 min or until the butter sizzles.
  • Step #4 Remove pan from oven, tilting the pan to coat bottom.
  • Step #5 Immediately pour batter into the hot pan.
  • Step #6 Top with peach slices, pecans & cinnamon.
  • Step #7 Bake at 425F degrees for 16-20 min or until puffed & golden brown.
  • Step #8 Meanwhile in a small bowl, mix cream sauce ingredents, mixing well.
  • Step #9 Cut pancake into wedges.
  • Step #10 Serve as soon as possible with cream sauce.
