Ingredients
  • 3 medium finely sliced tomatoes .
  • 1/4 c olive oil .
  • 1 small sliced onion (optional) .
  • 2 lemons, juice of .
  • salt & pepper (pepper is optional) .
  • 1 tbsp sliced mint leaves or 1 tsp dried mint .
  • 1 crushed garlic clove (optional) .
  • 1/2 bunch sliced fresh parsley .
  • 1-2 finely sliced cucumber .
  • 1 finely sliced green onion

Directions
  • Step #1 Mix all ingredients together, & ready to serve, although is best when marinated for 30 Minutes.
  • Step #2 This healthy Salad is excellent with Lentils & Rice Dish (mujadarah) or by itself.
