Green Apple & Tomatillo Cornbread Dressing Recipe

Ingredients
  • 1/4 c red currant jelly .
  • 3 tomatillos, husked, cored stem end, sliced .
  • 1/2 c sliced white onions .
  • Splenda sugar substitute .
  • 2 1/2 c cornbread stuffing cubes or cornbread, crumbled & dry .
  • 1/8 tsp cinnamon or allspice .
  • 1 green granny smith apples, peeled, cored, sliced .
  • 1/2 c raisins or craisins .
  • 3/4 c vegetable broth or chicken broth .
  • 1/4 tsp ground sage .
  • 1/4 c lemon juice .
  • Sauce .
  • Dressing .
  • 1/2 tsp ground sage .
  • Pam cooking spray .
  • 3 tbsps margarine .
  • 1/2 tsp white pepper .
  • 1 tsp salt or salt substitute

Directions
  • Step #1 In medium saucepan add dice tomatillos sliced apple, two 1 gram packets Splenda, lemon juice, salt, margarine, sliced onion, sage & pepper.
  • Step #2 Mix & cook on medium heat for about 6 or 7 mins, stirring.
  • Step #3 In large bowl, add dressing cubes or leftover crumbled cornbread & raisins or craisins.
  • Step #4 Pour saucepan mixture over dressing & toss.
  • Step #5 Add broth.
  • Step #6 Toss until mixed.
  • Step #7 Preheat oven 400°.
  • Step #8 Spray Pam In a large-ish round shallow sided baking dish or 8 X 8 baking dish.
  • Step #9 Fill dish with dressing.
  • Step #10 Bake 30 mins uncovered.
  • Step #11 If topped with chicken breasts or fish fillets, place on top before cooking.
  • Step #12 Last 15 mins of cooking, heat jelly & spices & spoon over meat or fish.
  • Step #13 I like to sprinkle a little paprika & chili powder on the meat or fish when it starts to cook, it browns quickly.
  • Step #14 Spoon sauce as directed if using chicken & fish with the dressing.
  • Step #15 You may also use turkey cutlets.
  • Step #16 Note: You may use sugar free jelly if desired.
