Jamaican Jerk Tempeh Recipe

Ingredients

1/2 tsp ground nutmeg .
1 1/2 tsps salt .
1 1/2 tsps ground allspice .
1 1/2 tsps dried thyme .
2 tbsps pure maple syrup .
3/4 c apricot juice .
1/2 tsp ground cinnamon .
Marinade .
1/4 tsp fresh ground pepper .
1/4 c minced fresh ginger .
16 oz tempeh .
3 large garlic cloves, minced .
1/2 small habanero pepper, seeded & minced .
1/4 c thinly sliced scallions .
2 tbsps olive oil .
1 tbsp fresh lemon juice

Directions

Step #1 Preheat oven to 350°F Prepare marinade: In medium bowl, whisk together all ingredients.
Step #2 Pour into large, shallow baking dish.
Step #3 Then add the tempeh, turning to coat.
Step #4 Cover up & bake, 40 mins.
Step #5 Remove from oven & let this stand 5 mins before serving.
