Sweet-and-sour Coleslaw Recipe

Ingredients
  • 2 medium red delicious apples, unpeeled, cored, & sliced .
  • 1/4 c vegetable oil .
  • cabbage leaves (optional) .
  • 1 tbsp sugar (to taste) .
  • 1 (8 oz) can crushed pineapple, undrained .
  • 2 medium carrots, scraped & shredded .
  • 1 small cabbage, shredded, about 6 c .
  • 1/8 tsp celery seeds .
  • 1/4 tsp pepper .
  • 1 small onion, finely sliced .
  • 1/2 c raisins .
  • 1/4 tsp salt .
  • 1/4 c white vinegar

Directions
  • Step #1 Drain pineapple, reserving 3 tbsps juice; juice set aside.
  • Step #2 Combine pineapple & next 5 ingredients In a large-ish bowl.
  • Step #3 Combine reserved juice, vinegar, & next 5 ingredients; pour over cabbage mixture, tossing carefully.
  • Step #4 Cover up & chill at least 1 hr.
  • Step #5 Serve in a cabbage-lined bowl, if desired.
