Spicy Coconut Milk Noodles Recipe

Ingredients
  • 150 g mushrooms, sliced .
  • 1/2 tsp turmeric .
  • 300F ml vegetable stock .
  • 5 cm fresh ginger, peeled & grated .
  • 275 g green beans, sliced on diagonal .
  • 1 red chili, deseeded & sliced .
  • 2 tsps ground coriander .
  • 400F ml coconut milk .
  • 3 garlic cloves, sliced .
  • 75 g unsalted peanuts .
  • 1 onion, sliced .
  • 125 g cabbage, shredded .
  • 2 tbsps vegetable oil .
  • 125 g dried medium egg noodles .
  • 1 stalk lemongrass, sliced

Directions
  • Step #1 Place noodles in a bowl & cover with boiling water.
  • Step #2 Leave to stand.
  • Step #3 Heat oil in a wok & carefully fry the onion, coriander, chilli, garlic, ginger, tumeric & lemongrass for 5 mins.
  • Step #4 Pour coconut milk & stock into the wok & just bring to the boil.
  • Step #5 Turn down heat & add the vegetables & drained noodles.
  • Step #6 Cover up & let simmer for 5 mins.
  • Step #7 Add the peanuts & serve.
