Ingredients
2 c luke-warm water .
3 c white flour .
1 c unprocessed wheat bran .
3 c beans, cooked .
7 g dry yeast
Directions
Step #1 1.
Step #2 Dissolve yeast in the water In a large-ish bowl.
Step #3 2.
Step #4 Add flour slowly & continue mixing until a dough starts to form.
Step #5 3.
Step #6 Add some more flour if the dough still looks sticky, but don't knead.
Step #7 4.
Step #8 Leave it in the bowl to rise for approximately 20 min or when the dough has reached the top of the bowl.
Step #9 5.
Step #10 Knead the dough on a well floured surface until it becomes quite elastic - it's very sticky, but once you've worked with it it'll get easier.
Step #11 6.
Step #12 Divide dough into 18 pieces & roll them out approximately 2 cms thick.
Step #13 7.
Step #14 Mash the ccooked beans/put them in the mixer - don't make them too mushy, there should still be some chunks left.
Step #15 TIPS: I put a small amount of all kinds of beans eg.
Step #16 kidney, mung beans, borlotti, blackeyed peas etc.
Step #17 8.
Step #18 Put some of the paste in the middle of the dough & wrap the sides around it then form into a normal bun, or a chinese 'dumpling' (baozi).
Step #19 9.
Step #20 Steam on high heat until you see steam coming out, then turn it down to medium heat & steam for another 10 mins.
Step #21 10.
