Weight Watchers Pasta Fra Diavolo Recipe

Ingredients
  • 2 tbsps dry red wine .
  • 1 onion (sliced) .
  • 3 tbsps tomato paste .
  • 1/4-1/2 tsp crushed red pepper flakes (depending on preference) .
  • 1/4 tsp salt .
  • 1/2 lb linguine .
  • 2 tsps extra virgin olive oil .
  • 1 (28 oz) can sliced tomatoes .
  • 3 garlic cloves (minced) .
  • 1/4 c fresh flat leaf parsley (finely sliced) .
  • 1/2 tsp sugar

Directions
  • Step #1 In a large nonstick sauce pan over med-heat/flame, heat the oil.
  • Step #2 Add the onion & garlic; cook stirring frequently, until golden, about 8 mins.
  • Step #3 Add the tomatoes, tomato paste, wine, sugar, salt & red pepper; bring to a boil.
  • Step #4 Reduce the heat & let simmer, until the flavors are mixed & the sauce is slightly thickened, uncovered, about 20 mins.
  • Step #5 Stir in the parsley.
  • Step #6 Meanwhile, cook the linguine according to the package directions.
  • Step #7 Drain & divide evenly among 4 plates.
  • Step #8 Spoon sauce over linguine.
