Italian Orange-cinnamon Semolina Dumplings Recipe

Ingredients
  • 6 tbsps cinnamon sugar .
  • 1/2 c sugar .
  • flour (for dusting) .
  • 1/2 c breadcrumbs .
  • 1 egg .
  • 2 egg yolks .
  • 2 1/4 c milk .
  • 1/2 c semolina .
  • 4 tbsps light olive oil .
  • 1 tsp orange blossom water .
  • 2 tbsps butter .
  • 4 tbsps butter

Directions
  • Step #1 Bring the milk to the boil over low heat/flame.
  • Step #2 Add semolina while whisking.
  • Step #3 Heat while stirring until cooked (you should have a pudding-like mass that doesn't stick to the pan).
  • Step #4 Stir in sugar, egg yolks, 2 tbsp butter (the mass should now become fluid again).
  • Step #5 Add orange blossom water to taste (be careful, this can easily overpower other tastes).
  • Step #6 Spread on a greased tray (about 1 inch thick), allow this to cool to about room temp.
  • Step #7 Cover up & put in the fridge until firm.
  • Step #8 Beat egg.
  • Step #9 Heat olive oil & butter over medium-low heat.
  • Step #10 Form semolina mixture into small balls, then egg, coat in flour, then breadcrumbs.
  • Step #11 Cook in oil/butter mixture until golden brown.
  • Step #12 Serve warm, sprinkled with cinnamon sugar.
