Tamale Veggie Pie Recipe

Ingredients
  • 1 c sliced onions .
  • 1 tsp canola oil .
  • 1/2 c yellow cornmeal .
  • 1 jalapeno pepper, seeded & sliced .
  • 1 (15 oz) can pinto beans, rinsed & drained .
  • 1 (4 oz) can sliced green chilies .
  • 1/2 c plain fat-free yogurt .
  • 1/2 c all-purpose flour, plus .
  • 3/4 tsp chili powder .
  • 1 tbsp all-purpose flour .
  • 1/2 c egg substitute .
  • TOPPING .
  • 1 (14 1/2 oz) can Mexican-style tomatoes .
  • 1/4 tsp baking soda .
  • 1/4 tsp salt .
  • 3/4 tsp ground cumin .
  • 1 garlic clove, minced .
  • 2 tsps butter, melted .
  • 1/2 tsp baking powder .
  • 1 c low-fat cheddar cheese, shredded

Directions
  • Step #1 In a small nonstick skillet coated with nonstick cooking spray, cook onion & garlic in oil until tender.
  • Step #2 Transfer to a large bowl.
  • Step #3 Drain tomatoes, reserving 2 tbsps juice; add tomatoes & juice to onion mixture.
  • Step #4 Stir in the beans, jalapeno, chilies, cheese, cumin & chili powder.
  • Step #5 Transfer to an 8-in.
  • Step #6 square baking dish coated with nonstick cooking spray.
  • Step #7 For topping, in a small bowl, mix the flour, cornmeal, baking powder, baking soda & salt.
  • Step #8 Whisk together the egg, yogurt & butter; stir in theto dry ingredients just until moistened.
  • Step #9 Spoon over filling; carefully spread to cover top.
  • Step #10 Bake, uncovered, at 375° for 20-25 mins or until filling is bubbly & a toothpick inserted into topping comes out clean.
