Ingredients
  • 1/2 c wine .
  • 1 leek, sliced .
  • 1/8 c fresh cumin, minced .
  • 1 quart grape juice .
  • Roman Fish sauce (use 2 tbsps) .
  • 2 tsps anchovy paste .
  • 40-50 mussels .
  • 1/8 tsp oregano .
  • 1/2 c vin santo wine .
  • 1/8 c fresh savory, minced

Directions
  • Step #1 Reduce the grape juice to 1/10 volume.
  • Step #2 Add the anchovy paste & the oregano.
  • Step #3 Use as directed.
  • Step #4 Mussel dish:.
  • Step #5 Wash the mussels thoroughly.
  • Step #6 Place in pot & add water to cover them.
  • Step #7 Add remaining ingredients.
  • Step #8 Boil until done.
  • Step #9 This means:.
  • Step #10 Shells will open during boiling.
  • Step #11 After shells open, boiling should continue for 3 to 5 mins.
