Stuffed Shell Pierogies Recipe

Ingredients
  • butter or margarine (I use lots) .
  • 1/2 tsp pepper .
  • 8 oz cheddar cheese, shredded (2 c) .
  • 1 (12 oz) box jumbo pasta shells, cooked until tender-firm & cooled under running cold water .
  • 3 lbs potatoes, peeled & quartered (about 8) .
  • 6 c onions, sliced (Vidalia, if you can get them) .
  • 1 tsp salt

Directions
  • Step #1 Cooks potatoes until soft, drain.
  • Step #2 Add cheese, salt & pepper & mash until smooth.
  • Step #3 Melt margarine or butter in large skillet.
  • Step #4 Add onions & cook 10 to 15 mins until tender but NOT browned.
  • Step #5 Spread half the onions over the bottom of a 13x9 baking dish.
  • Step #6 (May take 2 pans) Stuff each shell with heaping tbsp of the potato mixture, close edges.
  • Step #7 Arrange in single layer over onions, spread remaining onions on top (you can use two pans or freeze the pierogies for later use).
  • Step #8 Bake at 350 degrees uncovered 15 to 20 mins or until heated through.
