Watkins Pumpkin Cream Cheese Muffins Recipe

Ingredients
  • 1 c of plain pumpkin (fresh or canned) .
  • 1 tbsp watkins pumpkin spice .
  • 3 eggs .
  • 3 tbsps sugar or Splenda sugar substitute .
  • 1/3 c whipping cream .
  • 2 tsps watkins double-strength vanilla .
  • 1/3 c milk .
  • 1/2 tsp of watkins double-strength vanilla .
  • 1/2 tsp cinnamon .
  • 1/2 tsp nutmeg .
  • 1 (18 oz) package yellow cake mix .
  • Cupcakes .
  • 1 (8 oz) package cream cheese .
  • 1 tsp watkins cinnamon .
  • 1 tsp watkins nutmeg .
  • Cream Cheese Filling .
  • 1 tbsp watkins pumpkin spice .
  • 1/2 c pumpkin

Directions
  • Step #1 Cupcakes:.
  • Step #2 In a mixer bowl mix all dry ingrediants & pumpkin mix on lowish speed.
  • Step #3 Then add milk,vanilla & eggs one at a time.
  • Step #4 Put mixer to medium speed for 2 mins or until smooth.
  • Step #5 Filling:.
  • Step #6 In the mixer bown put creamcheese in & turn mixer on medium speed until smooth.
  • Step #7 Then add the egg, scrape sides of bown & let egg & cheese mix together.
  • Step #8 Add pumpkin & whipping cream.
  • Step #9 then add the rest of dry ingrediants.
  • Step #10 Put mixer on meduim-high let mix for2-4 mins or until smooth.
  • Step #11 Pre-set oven to 350 degrees.
  • Step #12 Spray muffin pan with Watkins cooking spray, if you like dust with a bit of flour.
  • Step #13 Depending on how deep your muffin pan is you put: this is layered.
  • Step #14 1-2 tbls of mix.
  • Step #15 2-3 tsps of filling.
  • Step #16 1-2 tbls of mix.
  • Step #17 Put in oven for 30-45 mins or until tooth pic comes out clean.
