Poached Pears With Chocolate-pear Sauce Recipe

Ingredients
  • 4 pears, slightly under-ripe, peeled, halved, cored .
  • 4 oz bittersweet chocolate, sliced (NOT unsweetened or semi-sweet) .
  • 1/2 c sugar .
  • 1 c dry white wine .
  • 1 c pear nectar

Directions
  • Step #1 Stir pear nectar, white wine & sugar in a heavy large saucepan over med.
  • Step #2 high heat until sugar dissolves & syrup comes to a boil.
  • Step #3 Add pears to syrup in saucepan.
  • Step #4 Cover up pan, reduce heat to med.
  • Step #5 - low, & let simmer until pears are tender, about 8 mins.
  • Step #6 Using slotted spoon transfer pears to plate.
  • Step #7 Increase heat to med.
  • Step #8 - high & boil poaching liquid until reduced to 3/4 c, about 8 mins.
  • Step #9 Remove pan from heat.
  • Step #10 Add chocolate; whisk until chocolate melts & sauce is smooth.
  • Step #11 Place 1 warm pear half on each plate.
  • Step #12 Top with warm chocolate sauce.
  • Step #13 Or, cover pears & chocolate sauce separately & put in the fridge up to 2 days; then serve pears cold with sauce, rewarming sauce, if desired.
