Salt And Pepper Squid Or Calamari With Cucumber Salad Recipe

Ingredients
  • Salad .
  • 1 tbsp red wine vinegar .
  • 1/2 tsp cracked black pepper .
  • 2 green onions, sliced thinly (also known as spring onions) .
  • 1/2 tsp lemon pepper seasoning .
  • 1 tbsp peanut oil .
  • 1/2 c fresh mint leaves, loosely packed .
  • 1 tbsp peanut oil .
  • 1/3 c roasted peanuts, sliced coarsely .
  • 1 lebanese cucumbers, sliced thinly (about 130 grams) .
  • 250 g cherry tomatoes, halved .
  • 1 tsp sea salt .
  • Squid .
  • 500 g squid, cleaned hoods only

Directions
  • Step #1 Cut squid hoods along one side & open out.
  • Step #2 Using a small sharp knife, score inside of hoods in a diagonal pattern, without cutting all the way through.
  • Step #3 This will allow the squid to curl during cooking.
  • Step #4 Cut each squid hood into eight pieces.
  • Step #5 Sprinkle top squid with mixd pepper, salt & lemon pepper seasoning.
  • Step #6 Heat oil in wok or large frying pan, stir-fry squid in batches until curled & just cooked through.
  • Step #7 Serve squid with cucumber salad.
  • Step #8 Cucumber Salad: Combine cucumber, onion, tomato, nuts & mint in medium bowl.
  • Step #9 Add mixd vinegar & oil, toss to mix.
