Italian Sirloin Stew Recipe

Ingredients
  • 1/8 tsp ground red pepper .
  • 1 lb boneless beef top sirloin steaks, 1 inch thick .
  • 2 medium zucchini, cut into 1/4 inch slices .
  • 1 tsp dried basil leaves .
  • 2 tbsps olive oil, divided .
  • 2 medium onions, cut into 1/4 inch slices .
  • 1 (14 1/2 oz) can tomatoes, undrained .
  • 1 c beef broth .
  • parmesan cheese, grated (optional) .
  • 1 garlic clove, crushed

Directions
  • Step #1 Cut beef steak into 1/4 inch thick strips; cut each strip into 1 inch pieces.
  • Step #2 Combine garlic with one tbsp oil; stir in theto beef & reserve.
  • Step #3 Saute onion in remaining oil in large saucepan 3 mins.
  • Step #4 Sprinkle top with basil & pepper; cook & stir 1 min.
  • Step #5 Add tomatoes, beef broth & zucchini.
  • Step #6 Bring to a boil; cover, reduce heat & let simmer 15 mins.
  • Step #7 Meanwhile heat large nonstick skillet over medium-high heat.
  • Step #8 Cook & stir beef 1 to 2 mins; add to sauce.
  • Step #9 Stir 2 tsps cornstarch dissolved in 2 tablesppons water into stew & cook this until slightly thickened, about 2 mins.
  • Step #10 Sprinkle top with grated cheese if desired.
  • Step #11 Serve as soon as possible.
