Beef Roast With Bacon-chili Gravy Recipe

Ingredients
  • 2 medium carrots, coarsley sliced .
  • 3 lbs boneless beef chuck roast .
  • 1/2 tsp garlic pepper seasoning .
  • 4 slices bacon, cut into 1/2 inch pieces .
  • 1/4 c beef broth .
  • 1 (4 1/2 oz) can sliced green chilies .
  • 1/4 c chili sauce .
  • 1 tbsp all-purpose flour

Directions
  • Step #1 Cook bacon in 12 inch non stick skillet over med-heat/flame,stirring every once in awhile, until brown & crisp; remove this from skillet with slotted spoon & drain on paper towels.
  • Step #2 Reserve bacon fat in skillet.
  • Step #3 If beef roast comes in netting or is tied, do not remove.
  • Step #4 Sprinkle top beef wth garlic pepper.
  • Step #5 Cook beef in bacon fat in skillet over med-heat/flame 5 to 6 mins, turning every once in awhile, until brown on both sides.
  • Step #6 Spray 4 to 5 quart slow cooker (aka crockpot) with cooking spray.
  • Step #7 Place beef in cooker.
  • Step #8 Top with bacon & carrots.
  • Step #9 Mix green chiles, broth, chili sauce & flour in small bowl; pour over mixture in cooker.
  • Step #10 Cover up & cook on low heat setting 10 to 12 hrs.
  • Step #11 Place beef on platter; remove netting or strings.
  • Step #12 Stir gravy in cooker; serve this with beef.
