Step #1 Cook bacon in 12 inch non stick skillet over med-heat/flame,stirring every once in awhile, until brown & crisp; remove this from skillet with slotted spoon & drain on paper towels.
Step #2 Reserve bacon fat in skillet.
Step #3 If beef roast comes in netting or is tied, do not remove.
Step #4 Sprinkle top beef wth garlic pepper.
Step #5 Cook beef in bacon fat in skillet over med-heat/flame 5 to 6 mins, turning every once in awhile, until brown on both sides.
Step #6 Spray 4 to 5 quart slow cooker (aka crockpot) with cooking spray.
Step #7 Place beef in cooker.
Step #8 Top with bacon & carrots.
Step #9 Mix green chiles, broth, chili sauce & flour in small bowl; pour over mixture in cooker.
Step #10 Cover up & cook on low heat setting 10 to 12 hrs.
Step #11 Place beef on platter; remove netting or strings.
Step #12 Stir gravy in cooker; serve this with beef.
