Sweet Lamb Curry Recipe

Ingredients
  • 1/2 c chicken stock or water .
  • 750 g ground lamb .
  • pappadams, to serve .
  • 1/2 c fruit chutney .
  • 2 tbsps vegetable oil .
  • 1 brown onion, finely sliced .
  • 2-3 tbsps mild curry powder .
  • 1 granny smith apples, peeled, cored, finely sliced .
  • thick Greek yogurt, to serve .
  • 1/2 c sultanas

Directions
  • Step #1 Method.
  • Step #2 Heat oil In a large-ish heavy-based saucepan over med-heat/flame.
  • Step #3 Add onion.
  • Step #4 Cook for 2 to 3 mins or until tender.
  • Step #5 Increase heat to high.
  • Step #6 Add curry powder & mince.
  • Step #7 Cook, stirring with a wooden spoon, for 5 to 6 mins or until browned.
  • Step #8 Stir in chutney, apple, sultanas & stock or water.
  • Step #9 Bring to the boil.
  • Step #10 Reduce heat to medium-low.
  • Step #11 Cook for 15 to 20 mins or until mixture thickens.
  • Step #12 Spoon mince mixture into pappadums.
  • Step #13 Top with a dollop of yoghurt.
  • Step #14 Serve.
