Ingredients
  • 1/3 c pure maple syrup .
  • 3 tbsps flax seed oil, plus more .
  • 1 tsp pure vanilla extract .
  • 1 tsp coarse salt .
  • 1 tsp ground cinnamon .
  • 1/4 tsp ground nutmeg .
  • 1/2 c unsalted pumpkin seeds .
  • 1/4 c wheat germ .
  • 1/2 c dried cranberries .
  • 1/4 c unsweetened flaked coconut .
  • 3/4 c whole almonds, coarsely sliced .
  • 1 c apple cider .
  • 4 1/2 c old fashioned oats .
  • 1/4 c flax seeds .
  • 1/2 c dried mission figs, quartered lengthwise .

Directions
  • Step #1 1.
  • Step #2 Heat oven to 350 degrees Fahrenheit/ 176.
  • Step #3 6667 Celsius.
  • Step #4 Place coconut on ungreased sheet, & toast until light golden, about 6 mins.
  • Step #5 Set aside to cool.
  • Step #6 2.
  • Step #7 Reduce oven temperature to 300F degrees Fahrenheit/ 148.
  • Step #8 8889 Celsius.
  • Step #9 Lightly oil two baking pans.
  • Step #10 In a large bowl, mix rolled oats, flax seeds, wheat germ, pumpkin seeds, & almonds; set aside.
  • Step #11 3.
  • Step #12 In a small saucepan, bring cider to a boil; cook this until liquid has reduced to 1/2 c, about 7 mins.
  • Step #13 Stir in oil, maple syrup, salt, cinnamon, nutmeg, & vanilla extract.
  • Step #14 Remove pan from heat, pour liquid over oat mixture, & mix thoroughly.

  • Step #16 Divide mixture between baking pans, about 40 mins, & bake this until golden brown, stirring every 15 mins.
  • Step #17 Transfer to wire rack to cool completely.
  • Step #18 5.
  • Step #19 Transfer to a large bowl, & stir in the dried cranberries, figs, & toasted coconut.
  • Step #20 Store in an airtight container up to 2 weeks.
