Garlicky Mushroom Pakoras Recipe

Ingredients
  • 1 tsp chili powder .
  • 200 ml water .
  • 2 garlic cloves, crushed .
  • 1/2 tsp salt .
  • vegetable oil (for deep frying) .
  • 1 small onion, sliced .
  • 500 g button mushrooms, left whole .
  • 175 g gram flour .
  • 1 tsp cumin seeds .
  • 1/4 tsp baking powder

Directions
  • Step #1 Place the gram flour, salt, baking powder, cumin & chilli in a bowl.
  • Step #2 Make a well in the centre & add the water, mixing well to for a smooth batter.
  • Step #3 Add the garlic & onion to the batter & mix inches Leave the mixture to stand for ten mins while you wipe & trim your mushrooms.
  • Step #4 mix the mushrooms into the batter & stir this to coat.
  • Step #5 Heat enough oil to cover the pakoras in a pan to about 180C (so a cube of bread browns in 30 seconds).
  • Step #6 Once the oil is hot fry a few pakoras at a time until golden brown.
  • Step #7 Drain & keep warm.
  • Step #8 Serve with salt & lemon juice.
