Peachy Pineapple Upside-down Cake Recipe

Ingredients
  • 1/3 c vegetable oil .
  • 3 eggs .
  • 1 (18 oz) box yellow cake mix .
  • 1 (8 oz) can crushed pineapple, drained, juice reserved .
  • 1/4 c butter .
  • 1 c packed brown sugar .
  • 15 maraschino cherries .
  • 15 peaches, halves drained

Directions
  • Step #1 Heat oven to 325F degrees.
  • Step #2 In a 13X9 inch pan, melt butter in oven.
  • Step #3 Sprinkle top brown sugar evenly over butter.
  • Step #4 Place maraschino cherry in center of each peach half; place cut side down on the brown sugar (cherries will be on the bottom).
  • Step #5 Spoon pineapple around peaches.
  • Step #6 Add enough water to reserved pineapple juice to measure 1 1/4 c (I used pineapple juice & fruit juice out of the peach cans!).
  • Step #7 In a large bowl, beat cake mix, juice mixture, oil & eggs with electric mixer on lowish speed 30 seconds.
  • Step #8 Beat on med speed 2 mins, scraping bowl every once in awhile.
  • Step #9 Pour batter over peaches & pineapple.
  • Step #10 Bake 1 hr or until toothpick inserted in center of cake comes out clean & top is VERY DARK GOLDEN BROWN.
  • Step #11 Immediately run knife around side of pan to loosen cake.
  • Step #12 Place heatproof serving plate upside down on pan; turn pan & plate over.
  • Step #13 Leave pan over cake 1 min so topping can drizzle over cake.
  • Step #14 Cool 30 mins.
  • Step #15 Serve warm or cool.
