Cranberry Fudge Recipe

Ingredients
  • 1 (12 oz) package fresh or frozen cranberries
  • 2 c semisweet chocolate chips
  • 1 tsp vanilla extract
  • 1/2 c light corn syrup
  • 1/2 c confectioners' sugar
  • 1/4 c evaporated milk

Directions
  • Step #1 Line bottom & sides of an 8x8 inch pan with plastic wrap.
  • Step #2 Set aside.
  • Step #3 In a medium saucepan, bring cranberries & corn syrup to a boil.
  • Step #4 Boil on high for 5 to 7 mins, stirring every once in awhile, until the liquid is reduced to about 3 tbsps.
  • Step #5 Remove from heat.
  • Step #6 Immediately add chocolate chips, stirring untill they are melted completely.
  • Step #7 Add confectioner's sugar, & vanilla extract, evaporated milk, stirring vigorously until mixture is thick & glossy.
  • Step #8 Pour into pan.
  • Step #9 Cover & chill untill firm.
