Stove-top Smoker -- Smoked Salmon Caesar Salad Recipe

Ingredients
  • 1/2 tsp anchovy paste (optional) .
  • 8 slices Italian bread (6 oz) .
  • 2 tsps worcestershire sauce .
  • fresh ground pepper .
  • Salad .
  • 2 oz parmigiano-reggiano cheese .
  • 2 tbsps alder smoker wood chips .
  • Dressing .
  • 2 tbsps extra virgin olive oil .
  • 1 tsp prepared honey mustard .
  • 1 tbsp prepared honey mustard .
  • 1 large garlic clove, peeled .
  • 1 tbsp fresh lemon juice .
  • 1 salmon fillet, with skin (bones removed) .
  • 1/3 c canned fat-free chicken broth .
  • 1 small head romaine lettuce .
  • salt & freshly ground black pepper .
  • 1 tsp fresh lemon juice

Directions
  • Step #1 For dressing, mince garlic, add in the remaining ingredients; mix until well mixd.
  • Step #2 (Dressing may be put in the fridged for up to three days).
  • Step #3 For salad, separate lettuce into leaves, wash & dry.
  • Step #4 (Lettuce leaves may be wrapped in towel & put in the fridged up to 2 hrs before serving).
  • Step #5 Using 2 tbsps of Alder wood chips set up smoker on stove top.
  • Step #6 Place salmon skin side down on rack of smoker (Line the tray for easy clean up).
  • Step #7 Combine honey mustard & lemon juice; brush over salmon.
  • Step #8 Smoke for about 20 to 24 mins.
  • Step #9 Remove from heat & let cool in smoker.
  • Step #10 Cut bread into cubes.
  • Step #11 Spray sauté pan with cooking spray, & heat.
  • Step #12 Place bread in pan & lightly spray with the cooking spray.
  • Step #13 Sauté until brown.
  • Step #14 Set aside to cool.
  • Step #15 Place 2 outer lettuce leaves on each of four chilled dinner plates.
  • Step #16 Transfer remaining lettuce leaves to a large bowl, breaking any large leaves into pieces.
  • Step #17 Put bread cubes into lettuce, & toss.
  • Step #18 Add dressing & toss again.
  • Step #19 Arrange on lettuce-lined plates.
  • Step #20 Cut or break salmon into chunks, discard skin.
  • Step #21 Arrange salmon over lettuce mixture & sprinkle grated Parmesan cheese over the salads.
  • Step #22 Sprinkle top generously with pepper & a touch of paprika.
