Steamed Clams With Saffron And Tomato Recipe

Ingredients
  • 16 cherry tomatoes, halved .
  • 3 lbs clams, scrubbed .
  • sourdough bread, toasted .
  • 1 pinch saffron threads .
  • 1/4 c vegetable oil .
  • 1/4 c olive oil .
  • 1 tbsp garlic, minced .
  • 1/2 c fresh Italian parsley .
  • 2 large shallots, thinly sliced .
  • 1/4 c white wine vinegar

Directions
  • Step #1 Combine vinegar & saffron in large pot.
  • Step #2 Stir over medium-low heat until saffron begins to release its color, about 1 min.
  • Step #3 Add tomatoes, shallots, garlic, then both oils.
  • Step #4 Add clams to mixture.
  • Step #5 Cover up & cook over high heat until clams open, about 8 mins; discard any clams that do not open.
  • Step #6 Using tongs, divide clams among 4 bowls.
  • Step #7 Mix parsley leaves into cooking liquid.
  • Step #8 Spice up to taste with salt.
  • Step #9 Ladle cooking liquid over clams & serve this with toast.
