Lemon Blueberry Cookies Recipe

Ingredients
  • 1/3 c dried blueberries .
  • 1/2 c butter, room temp .
  • 1 1/4 c flour .
  • sugar .
  • 1/4 c cornstarch .
  • 1/4 tsp salt .
  • 1 1/2 tsps lemon peel, grated .
  • 1/4 tsp baking powder .
  • 1/3 c white sugar .
  • parchment paper .
  • 2 egg yolks, room temp

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Like a cookie sheet with parchment paper & set aside.
  • Step #3 In a large mixing bowl mix the butter & sugar.
  • Step #4 Using an electric mixer beat at medium until well incorporated & fluffy.
  • Step #5 Beat in egg yolks & lemon peel.
  • Step #6 Sift into a medium mixing bowl the flour, cornstarch, baking powder & salt.
  • Step #7 Add flour mixture 1/2 c at a time to the butter mixture, mixing on lowish speed until just crumbly.
  • Step #8 Stir in blueberries*.
  • Step #9 Place dough on lightly floured surface, divide in half.
  • Step #10 Knead each half until dough holds together.
  • Step #11 Using your hands form 16 balls out of each half.
  • Step #12 Place the first 16 evenly on the parchment lined cookie sheet.
  • Step #13 Take a glass, dip it in sugar & press each ball to 1/4 inch thickness.
  • Step #14 Bake for 12 to 14 mins, or until cookies are JUST golden around the edges.
  • Step #15 Repeat with second half.
  • Step #16 *You can also use dried cranberries or cherries for these cookies.
